I LOVE sausages. I don’t know whether it’s the memories of Kiwi barbies (my grandfather used to do a mean barbeque over driftwood collected from the beach in Waikanae), or the student meals with mashed potatoes and gravy when I shared a flat in Wellington. Mmm, just thinking about Hutton’s Sizzlers oozing with cheese… Just the mention of sausages, makes my mouth water.
But sausages are bad meat – filled with breadcrumbs and nitrates, and who knows what else. Unless you make your own.
Try these – they’re so easy, and we can attest to the fact that they are delicious!
1/4 tsp onion powder
Big pinch of ground nutmeg, cloves, and thyme
1 pound of ground meat (we used turkey, but you could use pork)
Sweet Italian Sausages
1/2 tsp onion powder
1 tsp fennel seed
1/2 tsp ground black pepper
1/2 tsp chopped fresh parsley
1 pound of ground meat (again, we used turkey, but you could use pork)
- Grind all the spices together using a mortar and pestle.
- Blend the spices with the ground meat. (We used the KitchenAid – fast and easy.)
- Shape the sausages into patties or meatballs, or add to sausage casings if you prefer.
- Cook in the fry pan, under the grill, or on the barbie.
