Homemade sausages

I LOVE sausages. I don’t know whether it’s the memories of Kiwi barbies (my grandfather used to do a mean barbeque over driftwood collected from the beach in Waikanae), or the student meals with mashed potatoes and gravy when I shared a flat in Wellington. Mmm, just thinking about Hutton’s Sizzlers oozing with cheese… Just the mention of sausages, makes my mouth water.

But sausages are bad meat – filled with breadcrumbs and nitrates, and who knows what else. Unless you make your own.

Try these – they’re so easy, and we can attest to the fact that they are delicious!

English Bangers
1/4 tsp onion powder
Big pinch of ground nutmeg, cloves, and thyme
1 pound of ground meat (we used turkey, but you could use pork)

Sweet Italian Sausages
1/2 tsp onion powder
1 tsp fennel seed
1/2 tsp ground black pepper
1/2 tsp chopped fresh parsley
1 pound of ground meat (again, we used turkey, but you could use pork)

  1. Grind all the spices together using a mortar and pestle.
  2. Blend the spices with the ground meat. (We used the KitchenAid – fast and easy.)
  3. Shape the sausages into patties or meatballs, or add to sausage casings if you prefer.
  4. Cook in the fry pan, under the grill, or on the barbie.
